			<content:encoded><![CDATA[<p>In the spirit of new and exciting changes for the new year, Cookie Mama has been hard at work in the kitchen, creating delicious spins on some of your favourite goodies. In addition to our gluten free, dairy free, and egg free products, we are now able to offer our customers vegan products as well. This means one of our cupcakes or cakes (no vegan cookies thus far, stay tuned) with dairy free and egg free icing and cake. We&#8217;re adding a little vegan to the mix!</p>

<p>We appreciate every single customer who has visited the store, made a custom order, and supported us with kind words and positive feedback. Without you, we would not be able to bake and create every day. Cookie Mama will be closed from December 25 to January 2.</p>
<p>We will be open for special orders only from January 3-9, and will resume regular store hours January 10.</p>
<p>We wish you a happy holiday, and look forward to serving you more goodies in the new year!</p>

<p>Earlier this month, Cookie Mama contributed to a special cause, the H.O.P.E fundraiser, A Night of Hope, with a donation of cookies and cupcakes. Established by a group of local women who want to bring Hope and Opportunity for People Everywhere, H.O.P.E partners with non-profit organizations to raise money for essentials in the developing world. Last year, they raised over $13,000 to fund a fully supplied schoolhouse for a village in Kenya, and this year they hope to raise enough money to sponsor three Somali women and help them earn their university education. Their guest speaker this year was Amanda Lindhout, a journalist who was kidnapped in Somalia and is now an advocate of women’s rights in the region.</p>
<p>It was awesome and inspiring to support the ladies of H.O.P.E!</p>

			<content:encoded><![CDATA[<p>One of the most frequently asked questions I get at the bakery about our gluten free products, besides: How did you make this taste so good? is why I decided to bake gluten free in the first place.</p>

<p>When I first opened Cookie Mama in 2009, I was aware of the issues around eating gluten, and after experimenting with the flavours and tastes possible with gluten baking, I was looking for a way to make these same products for the gluten free customer, done well (not well done). This personal challenge has lead to over 25 varieties of gluten free cupcakes and cookies, as well as our signature custom gluten free cakes and Nanaimo bars. From there, I tackled the delicious possibilities of creating dairy free icing and egg free products that would taste and look so good that you won’t know the difference.  All of this experimentation, using ingredients that can be finicky and at times, unpredictable, has allowed me to expand my own palette and also be willing to try new and different ways to bake. Like anything, the baking at Cookie Mama is an evolving process, and I hope that we can all grow together, to a sweeter and healthier way of life.</p>
<p>On that note, make sure you come by and try our gluten-free ginger cupcake! So good it will have you singing Sgt Pepper, between bites, of course.</p>
